It is oil pressed in a wooden mortar turned slowly by a bullock, the way oil was made before industrial expellers. The low speed keeps the temperature down, so the oil keeps its aroma and is never bleached or deodorised afterwards.
It is less processed. Refined oils are extracted at high heat, often with solvents, then bleached and deodorised. Bull-driven oil skips all of that, which is why it still smells strongly of the seed it came from.
Because it is unfiltered. The sediment is fine seed matter, and cloudiness is normal in unrefined oil. Clear, odourless oil is usually a sign of heavy refining.
