Crystallising is what real, unheated honey does over time. Commercial honey is pasteurised specifically to stop it, which also destroys the natural enzymes. Stand the jar in warm water to loosen it.
It has not been heated or fine-filtered, so the pollen, aroma compounds and natural enzymes remain. It looks less uniform than processed honey, and it tastes of whatever the bees were foraging.
Raw honey is not recommended for infants under one year old. For older children and adults it is an everyday food.
