Vellulli karam podi is an Andhra garlic-chilli powder eaten with idly, dosa or hot rice and ghee. Ruchitara roasts and hand-grinds it in small batches from a traditional Telugu recipe.

What is the difference between karam podi and gun powder?

Gun powder is the common English name for the dal-based podi served with idly and dosa — kandhi or papula podi. Karam podi is the broader family, including garlic (vellulli) and curry leaf (karvepaku) versions.

How should I store podi and how long does it keep?

Keep it in an airtight jar in a cool, dry place and always use a dry spoon. Stored that way it stays aromatic for several months.
