What pesarattu actually is
Pesarattu is a dosa made from whole green gram — pesalu in Telugu, whole moong elsewhere — usually with a little rice and ginger, green chilli and cumin ground in.
It is a staple of Andhra and Telangana breakfast, and it differs from a regular dosa in two important ways: there is little or no urad dal, and it does not need overnight fermentation.
Why it is higher in protein
A standard dosa is mostly rice, with urad dal as a supporting player. Pesarattu inverts that: green gram is the main ingredient, and it is a legume rather than a grain.
That gives you noticeably more protein and fibre for the same plate, along with a lower proportion of refined starch. It is the reason pesarattu tends to keep you full to lunch in a way a plain dosa does not.
